Sun dried, hand harvested, unrefined sea salt

Our salt comes from the coastal salt flats of Cuyutlán in Colima, Mexico, where salt has been made from seawater, sun and wind for centuries. It is gathered by hand by the salineros of the Sociedad Cooperativa de Salineros de Colima, a cooperative founded in 1925, using traditional methods passed from one generation to the next, and dried by the sun.

Texture you can feel

Hand harvesting leaves the crystals naturally irregular in shape and size. They crumble between your fingers, so you control how much you add and how finely. Crush a pinch for even seasoning while you cook, or leave some crystals whole for a little crunch on a finished dish. Because crystal sizes vary, start with a little, taste as you go, and adjust.
